French Toast Nugget Bowl

Nutrition is based on 2 slices of bread at approximately 80 calories each and standard almond butter. Different bread and almond butter brands will shift the final macros slightly.
Ingredients
- 2 slices bread, about 80 calories per slice
- 1 large egg
- 2 large egg whites
- 1 tsp ground cinnamon
- 1 tbsp granulated stevia
- 1/2 tsp vanilla extract
- Pinch of salt
- 1/2 cup strawberries
- 1 tbsp almond butter
- Spray oil
Instructions
- Cut each slice of bread into 9 small squares, making 18 pieces total.
- Whisk the egg, egg whites, cinnamon, stevia, vanilla, and salt in a bowl.
- Add the bread pieces and gently toss until evenly coated in the egg mixture.
- Lightly coat a nonstick skillet with spray oil and heat over medium-low heat.
- Add the coated bread pieces and cook for 5 to 7 minutes, turning occasionally, until golden on all sides and the egg coating is fully cooked.
- Dice the strawberries and add them to a serving bowl.
- Add the French toast nuggets.
- Microwave the almond butter for about 15 to 20 seconds, until warm and drizzleable.
- Drizzle the melted almond butter over the bowl and serve warm.
Cottage Cheese Animal Style Burger Fries

Ingredients
- 200g raw potato
- 4 oz 96% lean ground beef, raw
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp salt
- Spray oil
- 1/3 cup cottage cheese
- 1/4 cup plain Greek yogurt
- 2 tbsp sugar-free ketchup
- 1/2 tbsp yellow mustard
- 1 tbsp sweet pickle relish
Toppings
- 2 tbsp dill pickles, sliced
- 1/4 cup tomato, diced
- 2 tbsp green onion
- 2 tbsp shredded lettuce
Instructions
- Preheat the air fryer to 400°F or 200°C, or the oven to 425°F or 220°C.
- Cut the potato into thin fries.
- Lightly coat the fries with spray oil and season with half of the salt.
- Air fry for 16 to 20 minutes, shaking halfway through, or bake for 25 to 30 minutes, flipping halfway through, until golden and crisp.
- Add the ground beef to a nonstick skillet over medium heat. Season with the garlic powder, onion powder, and remaining salt.
- Cook for 5 to 7 minutes, breaking the beef into small crumbles, until fully cooked. Drain off any excess fat.
- Stir the cottage cheese, Greek yogurt, ketchup, mustard, and relish together until creamy.
- Chop the pickles, tomato, and green onion.
- Arrange the fries on a plate and top with the cooked ground beef.
- Spoon the cottage cheese burger sauce over the beef and fries.
- Top with the pickles, tomato, green onion, and shredded lettuce, and serve warm.
BBQ Chicken Smashed Sweet Potato

Ingredients
- 250g raw sweet potato
- 2 oz cooked shredded chicken breast
- 2 tbsp sugar-free barbecue sauce
- 40g fat-free shredded cheddar cheese
- 1 tbsp red onion
- 1 tbsp green onion
- Spray oil
- 1/8 tsp salt
Instructions
- Preheat the oven to 425°F or 220°C.
- Pierce the sweet potato with a fork and bake for 45 to 60 minutes, until extremely soft. Alternatively, microwave for 8 to 10 minutes until very soft.
- Place the cooked sweet potato on a lined baking sheet and gently smash it down with the bottom of a glass or fork.
- Lightly coat with spray oil and season with salt.
- Bake for 10 minutes, until the edges begin to brown slightly.
- Spread the barbecue sauce over the smashed sweet potato.
- Top with the shredded chicken, cheddar cheese, red onion, and green onion.
- Return to the oven for 5 to 7 minutes, until everything is hot and the cheese is melted.
- Serve warm.
